Cold nights, warm dishes…

I’ve been quite busy lately setting up my master thesis. Basically, it’s about redesigning a recipe for ice-cream. I’m not joking. This can be performed on a scientific level, seriously. More specific, it’s a special version of ice-cream, which is developed for people with certain health issues. It is truly a lot of work (currently tons of articles for me to read…) but it is fun though! :) 
However, dedicating myself to ice-cream most of the day, while rain drops keep splashing onto my window and hot tea in my favourite blue cap is a basic in these days, feels quite odd sometimes. That’s why this apple crumple happened in my kitchen last night to fully immerse into late autumn sentiments. Preparation is simple – as usual and (!!!) apple crumble comes right at any time and is perfect as sweet breakfast but just as good as satiating treat for tea time or rustic dessert. And it’s vegan, of course. ;) 
The recipe is pretty flexible, you can just use what is at hand and what fits your mood. Usually I use sunflower seeds but they were out of stock, why I took pumpkin seeds instead which worked great. I can imagine raisins in the crumple and pears instead of apple match divine too. 


Warm apple crumble 

serves 4 

4 apples
3 handful oat flakes
2 tbsp plant oil, preferably coconut oil
1/2 cup natural sweetener, raw cane sugar or honey 
1/2 cup dried banana
1 tsp cinnamon
1 tsp cardamom 
1 handful pumpkin seeds
raw cocoa powder 




Preheat the oven to 390°F/200°C.
Wash and slice the apples, distribute them in an oven dish and pour 1/2 cup water over it. This will keep the apples from sticking to the dish.
Combine all the other ingredients (except the cocoa powder) in a bowl and mix until well combined. 
Add the crumble mixture to the apples and sprinkle with some more pumpkin seeds and cocoa powder. Cook in oven for around 25 minutes until apples are soft and the crumble crunchy and golden.



Remove from the oven. 


Fall in love with that unique scent and rich colors. 


Let cool down for a bit.
